இஞ்சி – ஒரு இன்ச்

பூண்டு – 10 பல்

தேங்காய் துருவல் – 4 டீஸ்பூன்

சோம்பு – 1 1/2 டீஸ்பூன்

சீரகம் – ஒரு டீஸ்பூன்

மிளகு – 10

பொட்டுக்கடலை – ஒரு டீஸ்பூன்

வேர்க்கடலை – ஒரு டீஸ்பூன்

செய்முறை


முதலில் மீல் மேக்கரை சுடுதண்ணீரில் போட்டு 15 நிமிடம் ஊற வைத்து பிறகு நன்றாக தண்ணீரைப் பிழிந்து எடுத்து கைகளில் இரண்டு மூன்று ஆக உதிர்த்து வைத்துக் கொள்ளுங்கள். கடலைப்பருப்பையும் தண்ணீர் ஊற்றி கழுவி நல்ல தண்ணீர் ஊற்றி ஊற வைத்துக் கொள்ளுங்கள். இப்பொழுது ஒரு மிக்ஸி ஜாரை எடுத்து அதில் துருவிய தேங்காய், சின்ன வெங்காயம் ஐந்து, சோம்பு ஒரு டீஸ்பூன், சீரகம் ஒரு டீஸ்பூன், மிளகு, பொட்டுக்கடலை, தோல் நீக்கிய வேர்க்கடலை இவை அனைத்தையும் சேர்த்து சிறிதளவு மட்டும் தண்ணீர் ஊற்றி நைஸ் ஆக அரைத்து வைத்துக் கொள்ளுங்கள்.


இப்பொழுது குக்கரை அடுப்பில் வைத்துக் கொள்ளுங்கள். குக்கரில் எண்ணெய் ஊற்றி எண்ணெய் காய்ந்ததும் அரை டீஸ்பூன் சோம்பை போட வேண்டும். பிறகு பொடியாக நறுக்கி வைத்திருக்கும் பெரிய வெங்காயத்தையும் பொடியாக நறுக்கி வைத்திருக்கும் சின்ன வெங்காயம் பத்தையும் போட்டு நன்றாக வதக்க வேண்டும். பிறகு இதில் நீளவாக்கில் கீறிய நான்கு பச்சை மிளகாய் சேர்த்துக் கொள்ளுங்கள். அடுத்ததாக ஒரு கொத்து கருவேப்பிலையும் அதில் போட்டு நன்றாக வதக்குங்கள். வெங்காயம் நன்றாக வதங்க ஆரம்பித்ததும் இஞ்சி மற்றும் பூண்டை நன்றாக இடித்து அதில் சேர்த்து வதக்க ஆரம்பிக்க வேண்டும். இஞ்சி பூண்டு பச்சை வாடை போகும் வரை வதக்கிய பிறகு பொடியாக நறுக்கி வைத்திருக்கும் தக்காளியையும் அதில் சேர்த்து நன்றாக வதக்க வேண்டும்.


இப்பொழுது குழம்பிற்கு தேவையான அளவு உப்பையும் சேர்த்து தக்காளி நன்றாக குழைந்து கிரேவி பதத்திற்கு வரும் வரை வதக்க வேண்டும். பிறகு இதில் நாம் தயார் செய்து வைத்திருக்கும் மீள் மேக்கரையும் கடலைப்பருப்பையும் போட்டு நன்றாக ஒரு முறை கலந்து விடுங்கள். இப்பொழுது இதில் மஞ்சள் தூள், குழம்பு மிளகாய் தூள், கறி மசாலாத்தூள் இவற்றை சேர்த்து இதனுடன் சிறிதளவு மட்டும் கொத்தமல்லி தலையை சேர்த்து நன்றாக கலந்து விட வேண்டும். மீள்மேக்கரில் இந்த மசாலா அனைத்தும் சேரும் வரை நன்றாக கலந்து விடுங்கள்.


இப்பொழுது அரைத்து வைத்திருக்கும் தேங்காய் விழுதை அதில் சேர்த்து ஒரு நிமிடம் வரை வைத்து நன்றாக கலந்து விட்டு பிறகு இதில் ஒன்றரை கப் அளவிற்கு தண்ணீர் ஊற்றி ஒரு முறை அனைத்தையும் கலந்து விட்டு குக்கரை மூடி விட்டு விசில் போட்டு விடுங்கள். மிதமான தீயில் இரண்டு விசில் வந்ததும் அடுப்பை அணைத்து விடுங்கள். விசில் முழுவதும் போன பிறகு மறுபடியும் அடுப்பை பற்ற வைத்து குக்கரை அடுப்பில் வைத்து இரண்டு நிமிடம் மட்டும் கொதிக்க விடுங்கள். பிறகு பொடியாக நறுக்கி வைத்திருக்கும் கொத்தமல்லி தழையை தூவி இறக்கி விடுங்கள். அவ்வளவுதான் சுவையான கமகமக்கும் சைவ குடல் குழம்பு தயாராகிவிட்டது....

செய்முறை

முதலில் புளியை 100 எம்எல் தண்ணீரில் ஊற வைத்து கரைத்துக் கொள்ளுங்கள். 100 கிராம் துவரம்பருப்பை குக்கரில் வைத்து குழைய வேகவைத்து அதையும் எடுத்து வைத்துக் கொள்ளுங்கள். கீரையை சுத்தம் செய்து அதையும் தனியாக எடுத்து வைத்துக் கொள்ளுங்கள். இப்பொழுது அடுப்பில் ஒரு கடாயை வைத்து ஒரு டேபிள் ஸ்பூன் துவரம் பருப்பையும், ஒரு டேபிள் ஸ்பூன் பச்சரிசியையும் போட்டு ஐந்து நிமிடம் நன்றாக வறுக்க வேண்டும். பிறகு இதை ஆற வைத்து மிக்ஸி ஜாரில் போட்டு பொடி செய்து வைத்துக் கொள்ளுங்கள்.


அடுத்ததாக தேங்காய், மிளகு, சீரகம் காய்ந்த மிளகாய் எட்டு இவை நான்கையும் மிக்ஸி ஜாரில் போட்டு தண்ணீர் ஊற்றி பேஸ்ட் ஆக அரைத்துக் கொள்ள வேண்டும். ஒரு கடாயை அடுப்பில் வைத்து அதில் எண்ணெய் இரண்டு டேபிள் ஸ்பூன் அளவு ஊற்றி எண்ணெய் காய்ந்ததும் கடுகு, மீதம் இருக்கும் காய்ந்த மிளகாய், சின்ன வெங்காயம் இவற்றை சேர்த்து வதக்க வேண்டும். சின்ன வெங்காயம் வதங்கியதும் பொடியாக நறுக்கி வைத்திருக்கும் பூண்டையும் சேர்த்து வதக்க வேண்டும்.


பூண்டும் நன்றாக வதங்கியதும் அதில் கருவேப்பிலை ஒரு கொத்து சேர்த்து நாம் அரைத்து வைத்திருக்கும் தேங்காய் விழுதை அதில் சேர்த்து இரண்டு நிமிடம் நன்றாக பச்சை வாடை போகும் வரை வதக்க வேண்டும். பிறகு தேவையான அளவு உப்பை சேர்த்து புளி கரைசலை அதில் ஊற்றி நன்றாக கிளற வேண்டும். புளியின் பச்சை வாடை போன பிறகு நாம் அரைத்து வைத்திருக்கும் பொடியில் இருந்து ஒரு டேபிள் ஸ்பூன் அளவு பொடியை சேர்த்துக் கொள்ள வேண்டும்.


பிறகு அதில் கீரையை சேர்த்து ஐந்து நிமிடம் கீரையை வேக விட வேண்டும். கீரை நன்றாக வெந்ததும் இதில் 250 எம்எல் தண்ணீரை ஊற்றி வேக வைத்திருக்கும் பருப்பையும் அதனுடன் சேர்த்து நன்றாக கலந்து விட வேண்டும். நன்றாக கொதிக்க ஆரம்பித்ததும் இதில் கால் ஸ்பூன் அளவுக்கு மஞ்சள் துளை சேர்த்து நன்றாக கலந்து விட்டு அடுப்பில் இருந்து இறக்கும்பொழுது ஒரு டேபிள் ஸ்பூன் நல்லெண்ணையை ஊற்றி இறக்க வேண்டும். சுவையான முருங்கைக் கீரை குழம்பு தயாராகிவிட்டது....
